Summer recipes: halloumi cheese and summer vegetables skewers


        So it's finnaly summer, the sun is shining and everybody is thinking of weekend. If your weekend means barbecue, then this is the recipe for you: halloumi cheese and summer vegetables skewers are perfect for vegetarians, quick and easy to prepare and they certainly are the healthy option for your barbecue.
        And if you are like myself, and don't have the barbecue option, just fry them in the grill pan - the result is just the same :)


Ingredients: (serves 4):
- 250 grams halloumi cheese
- one courgette
- 4 shallots
- 10-12 cherry tomatoes
- sea salt
- black pepper
- olive oil
- lemon juice


Method:
1. cut the halloumi cheese and the vegetables into even cubes (except of the cherry tomatoes)
2. add them onto the wodden or metallic skewers
3. sprinkle some olive oil, a few drops of lemon juice, some sea salt (not too much, as the cheese is a bit salty) and fresly ground black pepper
4. cook on the grill for 2-3 minutes on each side

Serve warm, with a glass of white wine :)
